Korean-style Zha Jiang Mien (Noodle), aka Jiajangmyun

I have been missing from my blog for a while now due to other commitments, aside from family - working full-time and taking classes in Hospitality Management Program at a local community college.  My goal is to be able to continue updating my blog on a regular basis or as often as possible.  So, here is my next recipe.

A Korean friend of mine made this noodle dish and I liked it a lot.  This is a Korean version of the Chinese Zha Jiang Mien that is very popular in Korea.  The recipe below is from my friend, Maria Lee.  It is a quick one-dish meal for either lunch or dinner - it has carbohydrate, protein and vegetable in it.  Serve with picked radish as a side dish.

Korean-style Zha Jiang Mien (Noodle), aka Jiajangmyun


Ingredients (for 3 servings):
  • 3 tbsp roasted black bean paste (found in Asian or Korean market, usually in a glass jar)
  • 1 tbsp mirin
  • 1 tsp sugar
  • 1 tbsp potato starch or corn starch, mixed with 1 cup of water
  • 1 cup of water
  • 1 cup cabbage - 1/2" cube
  • 1 cup onion - 1/2" cube
  • 1 cup zucchini - half moon cut
  • 1 cup ground pork
  • 1 cup shrimp - cut into small pieces
  • 3 bunch of Korean noodle, not dried one, the one kept in the fridge area in Asian market

Preparation:
  1. Cook noodle in boiling water for 4-5 minutes, rinse and drain, set aside
  2. Pour 2 tbsp oil in saucepan or wok
  3. Stir fry pork first until fully cooked
  4. Add onion, cabbage, and shrimp, then the roasted black bean paste
  5. After they are cooked for a few minutes, add mirin and sugar
  6. Add the potato starch and water mix
  7. Turn off the stove and add zucchini and mix well
  8. Scoop noodle into individual bowl and pour the sauce over the noodle, and ready to eat
