Stir Fry Tomatoes with Eggs

The dish is a staple in many Chinese home cooking.  It is a great simple recipe for something quick, easy, and delicious; and requires very few ingredients that you might already have in your kitchen.  It is a vegetarian dish but contains protein in the eggs.  It has a bit of sweet and tangy flavor to it.

Stir Fry Tomatoes with Eggs

Ingredients:
  • 4 beaten eggs
  • 2 stalks of green onion, cut into 3cm in lengths
  • 2 medium to large size tomatoes, cut into wedges
  • 2 tbsp oil for cooking
  • 1/2 tbsp salt
  • 1 tsp sugar

Direction:
  1. Heat 1 tbsp oil in a wok
  2. Pour in eggs, fry until barely set, then remove from heat
  3. Heat the remaining 1 tbsp oil in the wok
  4. Add green onion, stir fry until fragrant
  5. Add tomatoes, stir fry until soft
  6. Add a little water, salt, and sugar, continue to stir fry until flavorful
  7. Return eggs to the wok, stir fry until fully cooked
  8. Transfer to serving plate, garnish with some chopped cilantro (optional)
Serve 2 to 3 people
