- 4 beaten eggs
- 2 stalks of green onion, cut into 3cm in lengths
- 2 medium to large size tomatoes, cut into wedges
- 2 tbsp oil for cooking
- 1/2 tbsp salt
- 1 tsp sugar
Direction:
- Heat 1 tbsp oil in a wok
- Pour in eggs, fry until barely set, then remove from heat
- Heat the remaining 1 tbsp oil in the wok
- Add green onion, stir fry until fragrant
- Add tomatoes, stir fry until soft
- Add a little water, salt, and sugar, continue to stir fry until flavorful
- Return eggs to the wok, stir fry until fully cooked
- Transfer to serving plate, garnish with some chopped cilantro (optional)
